Avocado and Prawns


I love this and it is so easy to make. I normally have it without the nuts to keep the calories down!

Ingredients

2 large ripe avocados
2 large handfuls of shelled prawns
2 tablespoons low fat mayonnaise
Squeeze of lemon juice
1 tablespoon tomato puree
Large pinch paprika
Large handful of cashew nuts (optional)

 

Method

1. Half the avocados lengthways and remove the stones.
2. Fill each half of the avocados with prawns.
3. To make the dressing, blend mayonnaise, lemon juice and tomato puree together and spoon over the prawns.
4. Sprinkle the paprika over the mayonnaise dressing.
5. Scatter cashew nuts over the top and serve with a large crunchy mixed salad.
