Method1. Half the avocados lengthways and remove the stones.2. Fill each half of the avocados with prawns. 3. To make the dressing, blend mayonnaise, lemon juice and tomato puree together and spoon over the prawns. 4. Sprinkle the paprika over the mayonnaise dressing. 5. Scatter cashew nuts over the top and serve with a large crunchy mixed salad.
