Spicy Yoghurt Chicken


This spicy chicken is low fat and makes a tasty change when on a diet.

Ingredients

300ml natural, sugar free yoghurt
1 large onion, diced
2 garlic cloves, chopped or grated or 1 tsp dried or puree
1 tsp coriander seeds, crushed
handful of fresh mint, chopped or 1tsp dried
1 tbsp cumin seeds, crushed
2 tbsp smoked paprika
zest of one lemon
4 large skinless chicken breasts
lemon wedges to serve

 

Method

1. Put all ingredients except chicken and lemon wedges in a bowl and mix well.
2. Transfer the mixture to a freezer bag. Add chicken breasts to the bag and coat them thoroughly with the mixture.
3. Seal the bag and place in the fridge for at least 2 hours, preferably overnight.
4. When ready to cook, grill chicken for 6-10 minutes each side or until cooked.
5. Serve with lemon wedges and cooked vegetables or salad.
